A Healthy Chocolate Peanut Butter "Ice Cream" That Actually Tastes Like Dessert

From the CaltrackIQ whole-food dessert collection · Recipes · 4 min read

Chocolate peanut butter cottage cheese ice cream in a bowl

Most "healthy dessert" recipes are a sad compromise — a protein bar pretending to be a treat. This one isn't that. It's built on full-fat cottage cheese blended completely smooth (you will not taste cottage cheese, we promise), swirled with real peanut butter and dark chocolate. It's rich, it's cold, and it takes five minutes of actual work.

Cottage Cheese "Ice Cream" (Choc PB)

Ingredients

Instructions

  1. Blend the cottage cheese, honey (or dates), vanilla, and peanut butter until completely smooth — a real blender or food processor, not a fork. This step is what makes it taste like ice cream instead of cottage cheese.
  2. Fold in half the chopped chocolate by hand.
  3. Pour into a container. Top with the remaining chocolate and a pinch of sea salt.
  4. Freeze 3–4 hours until firm. Let it sit at room temperature for 5 minutes before scooping — straight from the freezer it'll be too hard to scoop cleanly.

Why cottage cheese actually works here

Full-fat cottage cheese has almost the same fat content as cream once it's blended smooth, but with far more protein per serving. Blending is non-negotiable — unblended cottage cheese in a dessert is a dealbreaker for most people, but fully blended it turns into something closer to a soft-serve base.
